Gingerbread Granola

One of my favorite foods to eat in the morning is granola. But not just any granola…I have always been super picky about how granola tastes for some odd reason. As much as I like it, I find it hard to find one from the store that I like. I make this recipe very often as it is the exact granola taste I look for. I hope you all will make it and enjoy it as much as I do!
Picture perfect gingerbread granola!
Ingredients:
3 ¼ cup rolled oats
1 cup nuts of your choice (measurement is subjective)
¼ tsp salt
½ tbsp cinnamon
¾ tsp ground ginger
3 tbsp cane sugar* (for extra sweetening if desired)
¼ melted coconut oil or olive oil (I recommend coconut oil)
½ cup maple syrup
1 tsp vanilla extract
1 cup dried fruit of your choice (measurement is subjective)
Instructions:
Preheat oven to 325°F.
In a large bowl, mix together the oats, nuts*, salt, ground ginger, sugar* and cinnamon.
In a smaller bowl, stir together the melted coconut oil or olive oil, maple syrup and vanilla extract.
Empty the wet mixture into the large bowl of dry ingredients. Mix until dry ingredients are fully coated with the wet mixture.
Line a baking sheet with parchment paper and spread the granola mixture evenly onto it.
Put in the oven for 18 to 22 minutes (at 9 minutes, stir the granola before resuming the time.)
When slightly browned, remove from the oven and leave to cool.
Add the dried fruits* during this cooling period.
Enjoy!
Although this granola may not taste exactly like gingerbread, the spices added create a delicious mouthful full of sweet ginger and cinnamon. You can top smoothie bowls with this granola or simply enjoy it on yogurt or with milk! I really hope you all come to love this recipe as much as I do!
